Holiday Coffee Cake

Hi everyone,

It's Christmas time which means it's baking season :) For the past week or so I have been baking all types of holiday goodies. Everything turned out quite well! Well almost lol

This morning I decided to prepare my Sour Cream Coffee Cake! It's baking currently and smells amazing! For those interested in making something simple and delicious here is the recipe:

Ingredients:

1 and 1/2 cups granulated sugar
3/4 cup (1-1/2 sticks) butter, softened
1 tsp. vanilla
2 eggs
2 cups flour
1 tsp of Baking Powder
1/2 tsp of baking soda
1 cup of Sour Cream
1/2 cup of chopped Pecans
1/3 cup firmly packed brown sugar
1-1/2 tsp of ground cinnamon
1/2 tsp of ground ginger


Step 1: In a large bowl, mix sugar, butter and vanilla. Then add the eggs one at a time until well blended.


Step 2: In a medium-sized bowl, combine flour, baking powder and baking soda. To this I added 1 tbsp of cinnamon and a tsp of ginger for extra flavor :P It's optional of course.

Step 3: Incorporate the dry ingredients to the wet ones gradually, along with the sour cream. Set aside.

Step 4: In a small bowl, mix pecans, brown sugar and spices.


Step 5: In a greased pound cake pan (mine is a Holiday tree one), sprinkle 1/3 of the pecan mixture at the bottom.

Step 6: Using a cookie scoop, pour half the cake batter in the pan.


Step 7: Sprinkle another third of the pecan mixture and cover with remaining cake batter.


Step 8: Sprinkle the rest of the pecan mixture and bake the cake for 1 hour at 350 deg.


Step 9: Make sure the pan is not crooked - see video for explanation lol. While playing with my ipod camera, I realised that my cake was not leveled in the oven. My reaction made me laugh afterwards :)



Step 10: Using a sifter, sift powdered sugar over your cake once cooled. It's will give it a beautiful winter forest look (picture to come) :)
